When pork meat was processed inside the farm, all peasant families from Romagna made salami. These are the origins of the recipe of the local Salami from Romagna.
Only the finest cuts from the excellent pork of our land: loin, ham and the so-called “lardello” lard mixed with salt and pepper. Cured in the natural “Filzetta” and air-dried for at least 30 days.
