The pork’s head is one of the most representative products from Romagna. It is produced from lard, snout, rind and tongue and is boiled with natural flavouring, such as salt, pepper, cinnamon and cloves.
A real delicacy for gourmets looking for pork specialities. It is produced in the artisan shop of Domenico Rossi, who still employs traditional cooking techniques from Romagna. He has processed local pork meat from Valmarecchia for over 40 years, making use of ancient traditional techniques while complying with relevant sanitary regulations.
