DESCRIPTION
It is a spring pecorino whose maturation occurs inside ancient limestone caves dating back to the Miocene, which were erected around a XV-century mill based in Mondaino during the Malatesta Age.
The technique of covering pecorino with some quintals of wheat, which is known in Mondaino only, dates back to the Malatesta Age and originated from the need of hiding cheese to avoid being sacked.
When wheat sprouts due to heat and humidity, the cheese starts fermenting and acquiring precious nutritional values.
Ancient rituals and artisan traditions give manufacturers the possibility to commercialize the only niche product of this kind in Italy and to apply important slow food principles which are still regarded to be indispensable factors to regenerate both body and mind.
