Expert peasant women knead the so-called "MACCHERONCINI DI CAMPOFILONE", that is to say thin stripes of egg pasta. This ancient rural village is situated in the province of Ascoli and is surrounded by lush, green hills overlooking the compelling Adriatic Sea. The key to the success our pasta has achieved both in Italy and abroad is the fact it is made with utmost passion according to ancient recipes which prescribe thin pastry sheets and gradual desiccation at a temperature which only slightly exceeds the room one. Making pasta by hand contribute to make it tasty, light and easily digestible.
